Al Khayma Heritage Restaurant, founded by Essam Al Salah, began with a question that kept coming back.
Guests who experienced Emirati hospitality at Al Khayma Camps in the Dubai desert often wanted to continue that experience once they returned to the city. They had connected with the food, the welcome and the traditions, and they wanted to know where they could find something similar in Dubai.
It was not a question asked once.
It came from different guests, at different times, and it was often the guides who heard it first and shared those conversations with the founder. Some guests even called the team, convinced that Al Khayma already had a place in the city.
Over time, those repeated requests became a clear signal. There was genuine interest in an Emirati experience in Dubai that felt just as personal, warm and rooted in culture as the one guests had discovered in the desert.
That became one of the first ideas behind Al Khayma Heritage Restaurant.
The Question Guests Kept Asking
The desert experience had already shown how strongly people responded to Emirati hospitality.
Emirati families and visitors from around the world were introduced to local food cooked slowly in the sand, to traditions and to a style of welcome that felt personal and generous.
For many, the experience created curiosity. They wanted to understand more, taste more and experience that same sense of hospitality again.
As similar requests continued to come in, they became more than individual questions. They became a reason to think seriously about bringing that experience from the Dubai desert into the city.
There was genuine interest in Emirati cuisine and culture, and there was an opportunity to create a place that could respond to that interest in a meaningful and authentic way.

What the Walking Tours Revealed
The walking tours through old Dubai added another important reason to the idea.
Conversations with Dubai’s tourism and cultural authorities helped bring the opportunity into sharper focus. The founder and the team spent time walking through Al Fahidi, observing how visitors experienced the district and how its stories, flavours and traditions came together.
The district was rich in character. It offered different cuisines, different communities and a strong sense of place.
But one thing was missing: an Emirati dining experience that felt genuinely local, homemade and rooted in the atmosphere of a real Emirati home.
That gap helped shape the vision for Al Khayma Heritage Restaurant.
The idea was not simply to open another restaurant. It was to create the feeling of entering an Emirati home.
Homemade cooking.
Original recipes.
The look and feel of a real Emirati house.
A place where the setting, the food and the welcome belonged together.
A place where visitors, residents and Emirati families could sit, eat and experience hospitality in a way that felt natural and genuine.
The walking tours helped sharpen that vision and showed how naturally an authentic Emirati dining experience could become part of old Dubai.

A Home for Emirati Cuisine
Another important motivation was to give Emirati cuisine a clearer identity of its own.
Emirati food has its own recipes, flavours, traditions and way of bringing people together, and that identity deserved greater visibility.
From the beginning, one of the ambitions behind Al Khayma Heritage Restaurant was to create a place where guests could experience Emirati cuisine in connection with the culture, stories and hospitality of the UAE.
That thinking also shaped conversations with partners, including Tripadvisor and Google. The way the restaurant was categorised mattered. The aim was for Al Khayma to be recognised as an Emirati restaurant, rather than being placed only within the broader Middle Eastern category.
This was about more than a label. It was about giving Emirati cuisine the recognition it deserved and ensuring it could stand clearly in its own name.
The Right Moment to Build
Once the idea had taken shape, the quieter period during COVID created an opportunity to focus more deeply on the project.
Essam believed strongly that Dubai would return with renewed energy, and that gave the team confidence to continue developing the restaurant.
For around two months, the project became part of their daily routine.
The food was tasted repeatedly. Recipes were discussed. Flavours were adjusted. Ideas were tested and refined. The team looked closely at every part of the experience, from the food itself to the atmosphere, service and feeling guests would take with them.
During this period, people connected to Dubai’s culture and tourism sector also showed interest in the project. Representatives visited during the development stage, followed the progress of the concept and joined tastings and discussions.
Their involvement added another perspective to the development of the restaurant and reflected a wider interest in creating experiences that could bring Emirati culture closer to both visitors and residents.
Building the Experience Day by Day
The development of Al Khayma Heritage Restaurant was highly detailed.
The food remained at the centre, but the team looked just as closely at everything around it: the house, the welcome, the atmosphere, the service, the stories and the way each dish was presented.
Every element had to feel connected, warm and personal.
The goal was to create an experience that carried the generosity of Emirati hospitality and felt rooted in real traditions from the moment guests entered until the moment they left.

Recipes with a Story
Many Emirati recipes begin at home.
They are learned through practice, remembered through family gatherings and passed down by mothers and grandmothers.
That connection became an important part of the spirit of Al Khayma Heritage Restaurant.
The ambition was not simply to serve Emirati dishes, but to preserve the feeling behind them: food prepared with care, memory and the familiarity of home.
In this way, the cuisine became part of a wider cultural story, connecting each dish with the traditions and family life from which it came.
A Clear Purpose
What began around a fire in the Dubai desert found a new home in old Dubai.
A place where food, hospitality and tradition come together.
A table where visitors, residents and Emirati families can experience Emirati culture in a way that feels personal and genuine.
The purpose of Al Khayma Heritage Restaurant remains clear: to bring the warmth and authenticity of the desert experience into the city, while giving Emirati cuisine a place where it can be recognised and understood in its own right.
